Tous les malts viennent d\u2019une malterie artisanale bio du Tarn et les houblons d\u2019Alsace, de Bretagne, d\u2019Allemagne, ainsi que quelques vari\u00e9t\u00e9s aromatiques que nous cultivons \u00e0 c\u00f4t\u00e9 de la brasserie. Nos bi\u00e8res fermentent 4 semaines (minimum) en cuves puis \u00e0 nouveau 4 semaines en bouteilles. Elles sont naturellement carbonat\u00e9es par l\u2019action des levures, sans adjonction de CO2 industriel.
